			<content:encoded><![CDATA[<p>Abondance is one of those cheeses that is just above and beyond the others. Made in the <a href="http://en.wikipedia.org/wiki/Haute-Savoie" target="_blank">Haute-Savoie region of France</a> (in the southeast near the border with Italy) for nearly 700 years, this artisanal cheese is made exclusively from milk from the Abondance breed of cattle, and it requires 60 to 70 liters of that milk just to  produce one wheel. As you would imagine, this is not your everyday cheese.</p>
<p>Semi-soft and full of creamy richness, this slightly-pungent pale-yellow cheese has a complex flavor profile of hazelnuts, lean butter, and a subtle earthiness. Awesome on its own, but could go nicely with a glass of lighter red wine (like maybe a Pinot Noir or a Barbera).</p>
<p>This is now one of three cheeses on our cheese plate on the dinner menu. Be sure to come in too enjoy it soon before it is no longer available!</p>

<p>That&#8217;s right: we&#8217;ve brought Hoegaarden back to our draft beer selection in perfect time for this beautiful spring weather! </p>
<p>Brewed in Belgium, the history of this beer dates back to Medieval monks, who began brewing Hoegaarden in 1445. While the recipe has probably seen a few changes since then, the overall approach and taste of the beer matches its centuries-long tradition. </p>
<p>This refreshing wheat beer is smooth with a subtle flavors of citrus fruits and spices. Mellow and acidic, Hoegaarden would make an awesome pairing for scallops, but also would work with salmon, chicken, or cheeses. </p>
<p>Available on draft now, but be sure to enjoy it before it disappears.</p>

It lives up to it&#8217;s name both in it&#8217;s power and its stealth: with fewer than 1000 cases produced and only in the 750ml bottles, it is only targeted to a select few, and we are lucky enough to be on the team. This is the beer to have by the fire this winter or with your hearty dinner with us. Available for sale in the restaurant or retail ($29).<br />
